One of my favorites...the pie.
The secret ingredient is Cayenne pepper.
Sadly the one Pumpkin I manage to grow each year isn't a food pumpkin (though its the grandson of the first one, I saved seeds) and has the wrong texture for food.
I have a few food ones left so those will make bread and muffins....
smaller pumpkins are sweeter and make better pie.
cooked pumpkin freezes well.
I use a blender to mix my pumpkin pie, then pour it into shells sitting on my oven rack. that way no spills.
The real key is vinegar in your pie crust.
I had a few squash (filled with maple syrup, craisins, pumpkin seeds etc) I had cooked but we didn't eat, chopped up next day and made pumpkin bread and its great. Will have to do that more.
