Title: muhfuggin pickles
Post by: James1214 on February 05, 2014, 03:30:07 PM
So I made some pickled eggs recently, what else do you guys pickle?

My spicy pickling brine is

A few cherry bomb peppers
A few serranos
2 tablespoons pickling spice
2 tablespoons mixed peppercorns
1 tablespoon red pepper flakes
2 tablespoons salt
2 tablespoons tumeric
1 tablespoon dry mustard
Coupla shakes of hot sauce
A dozen peeled cloves of garlic
1 onion
a couple of carrots, chopped
4 cups white vinegar

Put all ingredients into a saucepan and simmer for 10 minutes or so.

I have a gallon jar that I use for making pickles and this amount of brine works well for 2 dozen eggs which fills the jar just over half full. This one needs to be stored in the fridge or stuff can get a little funky. Leave for a week or so and you're set. I also use this brine for cucumbers, pearl onions, asparagus, broccoli, cauliflower.... basically anyting worth turning into a pickle.

The simplest way to try eggs is throw a few hard boiled in the pickle jar after the last pickle. Let sit for at least 2 weeks. If you like that, build from.

do it all the time, sometimes save pickle juice and add some fresh habanero's, tumeric, (nice color), and bay leaf for good luck.
never rest on your laurels.
any more than 3 weeks makes it cloudy... probably not a good thing but i pound em' anyway.
