Can you believe that other than on a sushi roll (where you don't really taste them), I had never partaken in an avocado in my 40+ years of life until a few weeks ago? And now I cannot go a day without eating one. Why didn't you tell me sooner? Soooooo good. I might have another one later.
wtf?
???
That's fuckin crazy talk man.
No shit?? That's almost as weird as this other guy I know that's never eaten an egg.
Care for a guacamole recipe?
I know. I always avoided them based on the look (same with guacamole, which I now love). It is crazy, in retrospect.

Sure, and any creative way to use avocados. It seems like I've heard of people eating hummus and avocado sandwiches, and both of those are things I only recently tried and now eat almost daily, so I'm gonna have to give that a shot.
gespacho, guacamole, in grilled corn salads, on sandwhiches, burgers and burritos...but start with some good homemade guac.

I got Potbelly hooked on 'em at SHoD. better late than never.
how long you planning on keeping us in suspense with that guac recipe, RAGE?
I just made a 4-avocado guacamole (and ate it in two days). Can't decide if that warrants a :D or :(
Didn't remember to buy a lime, but I forged ahead anyway. Avocados were perfectly ripe -- soft enough to mash, but no brown spots.
We always only have one so i need to stretch it - Avocado, salt, cumin, green onion, garlic, jalapeño, cilantro, lime, tomato. I like to crush the avocado with a potato masher so many irregular whole pieces of avocado remain.
you forgot the parsley, sage, rosemary & thyme
BA try substituting an avocado for the mayo in a tuna sandwich. get back to me with your findings. you will see this is not a conspiracy..
I make my guacamole different every time, depending on what I have around. The only mandatory ingredient is avocados, IMO.
chopped tomato
finely chopped onion
finely chopped garlic
lime juice or lemon juice
salsa (if you're out of everything else)
cilantro
in any combination. The only thing listed above which I won't add is cumin. I've never added jalapenos but I guess that could work. I'd rather keep it mild though.
a fickle fruit. That baked one LS posted looks amazing!
Trivia - alligator pear. I got another one if that sounds good. ok, Mexican butter. Love the aguacate!
More trivia: one cup of avocado has 10 grams of fiber. That is hella good for something that isn't a bean. ;)
I had Avacado in soup one day. the sliperry and fresh yellow-green slivers in juxtoposition to the red colored soup was....well, it worked.
anything you do with an avocado works because they are fucking delicious..
They are so good but I stil can;t figure out how to pick one or ripen it. How many species\kinds are there?
I like them better than melons. Although, rubbing them on melons comes to mind. Avacado party!
get it when its firm..put it on your counter in a brown paper bag in it will be ripe in a day or two.. it gets soft when its ripe. pretty much the opposite of most veggies and fruits..
Yeah, I usually buy a few at various degrees of firmness, so they won't all be ready at the same time.
cool, got the paper bag. good one.
Lumpy, that's smart. I need to buy a few at a time rather than just one at a time.
Haas avocados ripen from the inside out, so when they're soft to the light squeeze they're ready. however, there's at least one other variety that ripens from the outside in, so that softness won't necessarily indicate ripeness
aha, interesting
also, there is no cumin, cilantro, or oregano in guacamole. no herbs or spices whatsoever. the addition of these items turns what used to be guacamole into an entirely different dish: gringomoley
Sounds straight. I googled cumin guacamole. It might work but I never heard of cumin in guac, nor would I want it. Should be Fresh and crisp mix. Cumin would weigh it down, man. Sounds foreign. Is Cumin used in Mexican cooking?
edit; Shaft, it's your 3rd ingredient ? I will try cumin in a batch.
ground beef for tacos
ok. very workable. A Oaxacan chicken taco is hard to top! I love my ground beef too hotter than heck, several forehead towels for sure. And an egg on top (tex mex?)
The California spin on cuisine is an act against mankind.
Why is RAGER holding out on us? I stayed up all night waiting on the guacamole recipe...guess I have to sleep now.
The secret ingredient is salt.
no, it's not secret, it's essential. but thanks for attempting to unlock the mysteries of Mexican cuisine via Wisconsin all the same
bacon bits..or even a lil bacon grease really adds to guac.
no cumin, definetly no cilantro.
My guacamole would take your guacamole to school, son.
your guacamole is soft nahmean?
Sorry been busy workin deals.
RAGER GUACAMOLITO.
Avocados mashed roughly with a pastry cutter ( the U shaped wire thingey)
Stir in-
salt
lime juice
garlic powder
onion powder
some hot sauce
Fold in
diced tomatoes
chopped cilantro
cilantro? disqualified. >:(
Nope. cilantro rules.
that's a piss poor gringomoley recipe RAGER.
ps- you know who endorses cilantro in guac? bridget
I like it smooth hence the garlic and onion powder. Usually making it for others too so they no likey the chunks of onions or garlic.
you making it for octagenerians? and Shaft?
priest inhales food without feeling, we can tell.
cilantro is great but is not atda ingredient in guacamole and for me, it ruins it.
Nothing wrong with just lime, salt, avo, and tomatoes either.
Mine's close to RAGER's but no tomato. And I finely cut red onion & squash the garlic because I'm handy with a knife.

Add me to this list.
Not much of a cilantro on anything fan. Too much of a dominating flavor that I don't enjoy that much to begin with. But if you dig it, knock yourself out. Just warn me before I start dipping.
Thanks!
The lime or lemon juice replaces salt. You really don't need salt.
Also, upon further review, cilantro doesn't belong in there. And neither do jalapenos.
Damn y'all! The lumpster just schooled y'all on guacamole.
Man do I lerv cilantro.
Cilantro is good stuff

They're in several sushi rolls that I've had. But that's kinda how sushi is, to me...it's not that one ingredient that you taste, it's the blend of them all.
On another note, the avocado I had with my sandwich wrap and cottage cheese tonight was PERFECT. I followed it up with a couple of Cutie oranges for dessert. OK, four of them (I can never eat just two).
Avocado
chopped tomatoes
finely chopped onion
finely chopped jalapeño(more seeds for more heat)
finely chopped garlic
lemon or lime juice(to keep it from turning brown)
salt
That's what goes in guacamole.
we have a winner

It's not the seeds that give you heat. It's the veins inside.
That's a pretty righteous recipe though. As for the cumin haters, I think a shake or two of good, freshly ground cumin does wonders for guac. Adds a hint of sweetness to your scent receptors, but isn't actually sweet. A little earthy too!

I figure there is enough salt on the chips.
avocado and salt is a marriage made in heaven. do not force a hellish divorce
Mexicans amply salt everything.
and they got the best food. coincidence?
Quote from: RAGER on July 14, 2013, 08:55:32 PMMexicans amply salt everything.
Not this Mexican ! I hate salt. Most of my Mexican family covers their food with salt, and all they all have high blood pressure.
Not this Mexican either!*
*(I'm not Mexican)
I've eaten so much Mexican food they should at least give me an honorary degree
I just realized all I ate today was Taco Bell and El Pollo Loco
You're an honorary Mexican and you eat at Taco Bell? ???
I mostly take out, actually. and mostly because none of the local taquerias and roach coaches will sell me 5 bean burritos and all the sauce packets I can stuff into the remainder of that plastic bag and yet still leave room for way too many napkins as a makeshift lid for $5.95 out the door. that's all-weekend eatin' for under 6 bucks my friend. and still probably somewhat more nutritious than its serving size equivalency in ramen
Has anybody suggested that maybe you should learn to cook? Mexican food is super easy for the most part and whatever you cook on your own has to be way better than Taco Hell. The asian stuff is a little more complex.
What's this no cilantro in guacamole horseshit. If you're one of those incredibly unfortunate people who are (supposedly) genetically predisposed to hating on that fine fine green then that's a pretty sad state of affairs - for you. But don't go saying it doesn't belong in guac.
That's the same ingredient list I posted - dumb ass.

don't have time to cook lately, and trying to save $ so I can make it to Portland in August on our "tour". when I'm ready to cook again, Fart Soup is back in effect.
ez- cilantro is great, but like other great herbs it has no right to fuck up guacamole
Meant Vegan dumb ass
go toast more marshmallows, Shaft. hey, try sprinkling some cumin!
I said Vegan
and I said cumin
I was once served an avocado with just balsamic glaze drizzled over it, it was pretty good....
she said "balsamic glaze"..
"Drizzled all over it" I have a semi.
My guacamole would stop the Mexican Army invasion and cause strange women to give it to me right here and now...
My guac, besides ample amounts of cilantro, contains charred tomatillos.
It ain't nothing to fuck with.
try as you might, you're just not gonna out-delusional Shaft, ez
wtf?..why dont you all just toss some saffron in your guac too ? why not? maybe some anchovies ? how bout peaches?
You're the obvious connoisseur - I don't even think an Avocado would slow down from 55 MPH for you to even know you were eating it, amigo.

I don't know about that, but your impersonation of Lurch eating a taco is top-notch
oops, I FU'd
anywho, NM.
So, good day for Guac!
Shafty you look like you've been told to eat over the sink for the crumbs but have already started to stray away like a maniac....
A few weeks ago I was making fajitas and I learned the hard way that if you cook avocado it goes bitter. I found out at the last second it was far from ripe so I threw it in the frying pan...
And I'm not trying to give anyone a semi this time...
Food from the British Empire
***shudder***
Just because it isn't 20 times the size it needs to be, smothered in BBQ sauce corn syrup and bacon, and come with a side of 1 million fries and 50 litres of 'soda' that doesn't mean it's not good shafty....
