Your stuff looks killin', RAGER. I still refuse to get an iPHONE. I had my audio Porn phase with a digital camera. Maybe once i get good i'll do some food Porn shots. It's gonna be awile till i get to RAGER standards, but everyone should have goals in life. That is one of many for me.

made this salad, baby greens, caramelized pears with fresh goat cheese melted on top, toasted & spiced walnuts, onion, mushroom and homemade low fat yogurt based ranch dressing (which i made for my lady) dusted with smoked paprika, cayenne and a pinch of sea salt

Just got back from the local Farmers Market with some rapini (broccoli rabe) so i made a panini with it and some fennel salami, home roasted sweet peppers, and swiss on como.  On the side is some home-stoned pickled bits and some Trader Joe's chips.


I only ate half.  You want the rest?

Lunch today.  My take on Pan Bagnat plus a bit more.

A complex sandwich but oh man does it deliver and if you make it big like I did ( I used about a 12' boule`) you got sandwiches for a few days.  
Seriously they're better the next day and even the third day.  there are different variations, try your own.

Here's after i've built it from the tomatoes and tuna mixture with sliced cukes and fennel to the hard boiled eggs.

Here's the oil and salt cure olives and boquerones

A little seasoning and a dressing of evoo and dijon

Here's where I vere a bit.  Some herbed salumi.

Money shot.  You want to let this thing sit in the fridge for a few hours or overnight and kinda smash it with something like maybe between two plates and then just cut into quarters or eighths

European lunch time surf and turf if you will.  And this is no regular ol' tuna.  Oregon coast line caught young albacore tuna.  Very low mercury levels

i assume a lower merc level affects taste.. i dont think ive ever had tuna as fresh as you describe.

it still seems weird to me.
