Here's the butter recipe I used, two quarts cream made about four sticks of butter. This one ferments with yogurt on the counter to give it a bit of flavor. It is amazing.

It produces a jar of run-off too - which is buttermilk. I used it in a TexMex Mac and cheese and in a gravy for Swedish meatballs.
