So do you love our Food And Drink Forum section of StonerRocking.org?  I know I do.  I brought it to you.  I contacted DogFister and asked if we could have one and Gawd provided.  Our parents were right. Ask and thou shall receive.  But to my point.  I have regretfully taken a position where they pay me a bunch to do fuck all so I won't be cooking as much as I normally do.  Be prepared, this may piss me off and I may make a return much to the chagrin of my girl as she supports me and my cooking habit.  But just in case I need all you contributers to keep this shit alive.  You know who you are.

Khoomeizhi-keep posting your killer different veggies and fermenting ideas.  at least a few of us I know enjoy it.

MJS-Motivated home cook for a fuss bucket and the capital to try some shit that some of us might not be able to finance.  keep it up dude.  

Morty-For his crap food perspective.

Yep, I was pretty lit up when I started this thread.  But it's true, I barely have time to cook lately.  Stupid jobs!  I'm up early this morning trying to figure how to use all the damn food that's in the house without it going bad.  Harvest time in the garden's gonna be a bitch.

I made some strawberry jam - we had one left from last year so we compared a new one to a year old one.  Not much difference.

Pretty soon we are going to have to rename this thread. Thread where rager gets schooled constantly. This here is grilled chicken with grilled red onions, squash, zucchini, and red potatoes in a balsamic sauce. And grilled red potatoes tossed with fresh peppercorns and olive oil.

Haha--  I honestly just forget we have this forum.  Until Dogfister reset my broken password a couple of months back, I couldn't really navigate anywhere but "most recent post", which mostly took me to General, or sometimes the Jam Room.

Now all works as it should, and I'm here to report how much I love all things Hot Dog and Red Bull related!

OK.  It's time I let you guys know that I used to cook professionally (almost 20 years).  I think I can fill the void that RAGER is leaving.  At least temporarily.

Here is my promise:  I will post more regularly in the Food and Drink forum.  The problem is I don't really like to type.  That being said, I have a lot of experience and knowledge.  I also have a good grasp of what ingredients go together and a pretty good imagination.  I also make pretty good cocktails.

Not really much of a fan of Bloody Marys.  You should talk to Pissy.  But here's what I would do if my wife wanted one:

Fill a highball glass with ice
1.5 to 2 Oz vodka
Fill to almost top with Zing Zang Bloody Mary mix
4 dashes of Bitter Truth celery bitters
Garnish with pickled okra, pickled green beans, and/or pickled carrots

Enjoy your early Sunday buzz...

Favorite Chicken.  Also known as Chicken Piccata:

Not sure about amounts because I usually wing it.

4 good size boneless skinless chicken breasts
1-2 T capers
Juice of one lemon
1/2-1 cup dry white wine
2-3 T butter
Seasoned flour (add salt and pepper to maybe 1.5 cups of flour to taste)

Heat a large sautee pan to medium/high heat
Lightly pound chicken to get even thickness
Add to seasoned flour.  Get a good even coating.  Shake off excess flour
Pour enough oil to cover pan.  When hot add chicken to pan.  Lightly brown on both sides
Remove breasts.  Add to warm oven.  Do not worry if they are not thoroughly cooked
Pour wine, capers, and lemon juice to pan and reduce a little
Add chicken back to pan along with any excess juices from the chicken and cover until cooked through
Swirl in butter until melted

I'll come back later and give you a couple of marinades.  I've still got a few chores to do today.

Somewhere in here I posted a piccata recipe.  This also works with a firm white fish or you could do white fish margarita.

Yep. I've also done it with shrimp, turbot, and escolar.  We usually have chicken piccata twice a month.  My wife is the one that usually makes it. One of the very few dinners that she does better than me.

ZingZang and vodka all by itself makes a great Bloody Mary. Sparkle informed me a few weeks ago that Lee and Perins makes ZinZang- as such its really meaty with worchestershire.

But I like the following when I can get it:

Worchestershire
Celery salt
Black pepper
JalapeƱo pickle juice (about a tablespoon)
Horseradish
A few drops of Franks
Add vodka over all this
Homemade tomato juice is best.

Sometimes a dash of beer.

This is what I do when I get the chance. If I had some fresh shucked oysters, I'd be tempted to dump one in.

I like that it has the texture of salmon but a lighter flavor. The FDA took it off the market years ago because it's so oily. It can give you not very good poops sometimes.

Yep.  That's the only mix I use.

I've used most of the ingredients you mentioned.  At one point, I got so carried away with adding ingredients that they started turning shitty.  Now, I try to keep it simpler...something like Zing Zang, chipotle Tabasco sauce, maybe some Sriracha (not much), and perhaps a bit of Liquid Smoke.

Also, have you tried this?  Bacon infused vodka, commercially produced.  Good shit.

Oyster juice = umami.  Worchestershire too. I think that umami is the ultimate appeal of Bloody Mary's.

OK Lumpy, I've finally got a chance to get back to you. You can marinade chicken (or any kind of meat for that matter) in a vinaigrette.  The basic ratio is 1 part vinegar to 3 parts oil. You can use just about any vinegar and just about any kind of oil.

1/4 cup vinegar
3/4 cup extra-virgin olive oil
Salt & Pepper

Once you are comfortable you can add extra ingredients.  Here are some suggestions:

1 tablespoon Mustard - I like dijon or whole grain.
1 tablespoon Honey
1 Tablespoon Ketchup
Diced tomato
Fresh Herbs - I like cilatro, thyme, basil and tarragon but not necessarily together.

You can add anything you like really.

Marinade your meat over night and grill on a medium/hot fire.  Make sure you have a cool spot in case you have flair ups from the oil.  If you are adding honey there is also potential for burning.

it might actually work in a bloody mary, but if I really wanted bacon in a bloody mary id put a piece of bacon in one.
