In the course of a conversation I had with a guy from Rhode Island recently, he informed me that Providence has the best Italian restaurants in the United States.
I said, "Better than New York?"
    He insisted it was true.

I did a little internet research and found he was not alone in his opinion.

What do you guys say? You have a fave Italian restaurant?

                  Tell us all about it.

Don't tease me like that. Tell us about the food, the experiences you've had there.

The place I just went and posted in the thread best meals you've ever eaten def makes my list.  It's called Cinghiale and it's in Baltimore.

The other place I went that is in my top 3 meals of all time is a placed called Sistina on the Upper East side of Manhattan.  It has the same ethos as Cingiale.  Use the best ingredients possible, simple recipe's, and you get amazing food.

Problem is both of these are expensive as fuck.

don't have to have just pasta :o

pasta ain't the only gluten in an italian restaurant.  ;)  i may not have experience with the 'best' italian restaurants, but that vast majority i do have experience with, aren't good enough to make the challenge of avoiding the nearly totally ubiquitous gluten worthwhile.

man I could make you a to die for braciole or stuffed tenderloin free of gluten.  Unless the proteins in the tomatoes are a problem for your wife.  if that's the case i cannot help you nor do I want to. :D
