Last night I made a chicken and corn jack Mac with roasted  shallots roasted garlic and roasted poblanos. A mixture of breadcrumbs and parm over top with French mimolette cave aged melted oer top.

Wife accused the sauce of being broken so I got mad and didn't take a pic. It was not. I lubed the baking dish with shallot is it.

Edited cuz I guess I can't type on my phone.

Just made/consumed a batch of crispy fried green chile polenta cubes encrusted w/ crushed garlic, basil paste & Miyoko's parmesan, with a marinara dipping sauce. :D

Haven't figured out what goong is yet. Are you putting Ka Chai in there something about Pickled Rhizome...pickled ginger? Fun to look-up those Thai names and its various recipes.

This stuff. One of the recipes called for it and being a sucker for pickled....I'll look at H-Mart if I ever get there

That stuff sounds good. I thought ka chai was chives. Hmmm. I have some Chinese pickled mustard greens (su mi açaí) that I use in some dishes like tan tan mian.

Here's my haul from the Indian store nearby. Norther Thailand shares some Malaysian which shares some Sri Lankan which shares Indian. Poof.

Not a big cooking day. I injured myself last week and have been just dealing with it this week but it's catching up. Cracked ribs suck.

So just pounding some chili's to ferment maybe poach some chicken and grill some pork with fresh bay leaves for lunches for the week. Wife's making veg tofu crunchy tacos for dinner. I'm having beer.

Navigating my back garden can be a challenge. Lots of big ornamental grasses hiding dickhead rocks to trip over.

Thanks for the well wishes. Still fucking hurts bad and not sleeping well.

Chicken Corn Blue with pasta 2-kinds, heavy on chopped garlic with oil, cream, egg, and spicy cheese. Kimchi doesn't belong there. And the breast was ghastly - dry, lousyily made (that butcher is out, I shall make my own 'duh). Best part was the pasta!  Have a bunch pre-made for baking later. Served with virgin Ceaser cocktail mix.
