i broke the habbit..i only drink tea now..im a total tea snob. doest work nearly as well as coffee for either need but i feel better and my stomache never is upset anymore..coffee would fuck me up like that. i will have a cup from time to time, but im down to about 2 cups a month..

I eat lots of yughurt and musli, I call it Pap, it's my superfood. I usually make a big tupperwear of it every Sunday and soak about a quarter cup in milk overnight. I like to cut up half an apple in it. But I'm going to try the apple sauce because that would be a lot quicker.

Made "breakfast tacos" last night: salsa-basted tortillas stuffed w/ hashbrowns, bacon, scrambled eggs, queso quesadilla, and hot sauce.  Killer as usual.

I was recently down in Mexico with my Mexican wife and her Mexican relatives took us to buy some of that kind of cheese at a Mexican market. My wife and her many of her Mexican friends prefer that style of cheese in their Mexican food.

You'd think I was stoned when I came up with this one.  I diced up some leftover linguica and pepperoni pizza, sauteed up some taters, onions, and peppers in a cast iron skillet.  Cracked some eggs over top with some blue cheese,scallions, and Italian parsley.  Baked for aboot 10 min. on 400

My usual is something akin to:

5 eggs (farm fresh when I can0
sharp cheddar
2 red potatoes
whatever seasonings...pepper, minced garlic (extra good when it gets browned up) etc

fry up the reds a little to get some crispiness, pour in egg/cheese mix, harvest gigantic omelet thingy

triple espresso shot

whole navel orange, sometimes 2

Or replace all the potato business with spinach, tomatoes and some balsamic and romano cheese.
Wilt the spinach first or its a bitch to mix, egg being flung everywhere.

2x soft-boiled eggs in egg cups w/ pepper
Wheat toast w/ butter & tart jam (citrus marmalade or some berry rhubarb spread)
Three strips center-cut bacon
Pulpy OJ
Stout coffee w/ half & half

Dunk bacon in eggs, gulp oj, scarf toast, down coffee, take epic shit, carpe diem.

We had corned beef hash with St Patrick day's leftovers - cabbage, potatoes and a big old corn beef. It was delicious

Food TV has a one hour show about the best pancakes. 15 minutes and we're already off visiting the woods to collect syrup. How are they going to fill a whole hour? Crepes?

^^Excellent point.  Fried eggs can be done with big heat but an omelet should be done at lower heat and needs to be tended too.

Have you ever done a french omelet?  Look up Jacques Pépin's technique.  very decadent.

I'm curious as to why you would have frozen fish shipped in and not buy fresh.  i s Portuguese frozen cod better than fresh locally.  Ours is usually Alaskan up here and is probably frozen too.  Just wondering.  i should probably know the answer.

You can do healthy and tasty.  I'm sure the stuff they're serving you is frozen cheap shit full of sodium and preservatives.  Go somewhere where they at lest make the shit from scratch.  There's gonna be less crap in it because it's not processed to have a shelf life.  you were probably going to this place out of convenience so in that case, go to your local butcher or new seasons like store and buy the bulk sausage and make up some patties ahead of time and freeze them.  make your own sausage biscuit thingey.  If you need a stupid simple biscuit recipe let me know.  I f you need a kill gravy recipe let me know.  Eggs and grits are a no brainer to a southerner like you

Gotta disagree.  But i will say that eating just fruit in the morning is a good thing.  Then eat a fairly decent sized lunch and a small dinner and not at 8 oclock either.

Had some time for breakfast this morning.  Day off.

Grabbed a baked tater from a few days ago and fried it up.  That's a Calphalon non stick (I know).  My cast iron is packed until this weekend

Chicken sausage sounds awful!

I always loved beef sausage, I grew up eating Scottish 'square sausage', I think it's made from 20% beef, 20% rusk and 60% fat! They have no skin on them, and they're the perfect size for a roll or square bread, and the bread goes all soggy and yellow with the fat, even if I ate meat I wouldn't dream of eating them now, I'd post a pic but I'm on my phone....

I like the idea if those lightly boiled sausages though...

^My fav sauce lately.

1 4 minute boiled egg peeled and chopped. (should be a bit runny)
bit of dijon
1/4 chopped fresh parsley
1 Tblsp chopped fresh terragon
salt and pepper
4 chopped cornichons
1 Tblsp rinsed and chopped capers
little bit of red wine vin.
1/4 cupe evoo

Mix all at room temp.  pour over taters, sauteed veggies, toast, fish, fuckin whatever. rulz!  Sauce Gribiche.

Super easy breakfast dish. Congee or baizhou or khao tom. Whatever you call it it's rice porridge. Long grain white, jasmine, sticky rice. Mainly you use leftover rice cooked down to a porridge in broth or stock. Add what you want to it. Top it how you see fit.

I added leftover chicken, roasted shallots, and shiitakes and cooked it down in chicken stock fortified with xo sauce. You could just add some soy sauce. Then topped with scallions, cilantro, fried shallots
Send some Chiu chow chili oil for some heat. Mmmmmm.

Jok seems to me to be more like congee where it's cooked down to a porridge where as khao tom is cooked less and leaves the grains of rice whole. I've also seen khao tom referred to as a dessert from sticky rice steamed 8n banana leaves with other ingredients.

I'm going to make myself some cheat sheets with a bunch of different terminology so I don't always have to look things up so much. The spellings are all over the place though. Kaeng/gaeng, moo/muu, gai/kai.

I ordered from How Lee. An array of just generic stuff: spring rolls, lo mein, dumplings, and the main item: tiger skin peppers. A giant container of spicy lightly fried peppers with rice. All of it was awesome. It made it to two meals. Could easily have been 3.

But yeah, Chinese places are still open here.

I take the long beans and curl and braid them into a circle. I put them in the bottom of a circle mold and add the eggs and shrimp and cook until set then remove from molds.

Ugh. No. Clearly gimped. What the hot sauce? Looks correct, probably Louisisaca style or, Tapatilo. Looks watery, which in this case is correct. The toast side can fuck off. The sauasage look hopless. I hope you had enough Malpe Syrup for that "sauasge".

The hotsauce is topps store brand discounted as evident by line through bar code. The toast is a heal piece from a bullshit loaf of white bread. The sausage is school cafeteria quality.
Maple syrup is for pussies who cant handle high quality cafeteria sausage.

I put this together to show off my culinary skillz. Not many people are capable of making more with less.

Unintentionally made skull eggs.

I had leftover cornbread so I crumbled it up and through it some salt, black pepper, and some fennel seeds in a couple glugs of hot oil evoo in a pan. Then cracked a couple eggs over top and put the pan under the broiler until the yolks got nice and jammy. The put some Calabrian chili stuff and some pecorino on it. Yum.

Chefs, tonite I'll try a beer-can chicken in the convection oven - would you have a  suggestion for an oven temperature to try? I'm pretty sure the convection will crisp it up nice. By the way, the bird is in a salt brine for the next 5 hours.

Good ol' 350 until it's temps at 165 to the thigh bone. If it sit crispy to your liking then blast it at 450 for 5 min.

poached eggs over a tater-tot volcano (tossed in oyster sauce and feta) with smoked salmon. watched a tv chef so gave the dish a whirl (oyster sauce was my tweak). simply dropped the eggs in lightly boiling water for a few minutes. et voíla. my salmon was too thick but nicely buttery so it was okay. served with a refreshingly spicy tomato juice.

looking awesome. i made some fresh local cod and snapper in thai coconut with thai spices - some thai fish flavor chili bouillon, fish flavor flakes, fish sauce, soy sauce, and sichuan peppercorn, mushrooms, cabbage and onion. had a nice flavor. one pot but whatever.

Although Japanese don't reserve eggs for breakfast like us Americans that succumbed to Edward Bernays early 20th century "marketing" , I did in fact make this for breakfast.

Rice,brown and shimejji mushrooms and onions mixed with a fry sauce of tomato paste, soy sauce and loosened with dashi stock and sesame oil the give it zing, hold it together and provide the desired red color.

The sauce over the top is a miso curry ketchup.

The simplest form of this dish uses straight up ketchup for both. Nah.

Thanks. It was delicious. Good eye on the Valentina. Haven't had it in a while so I saw it I bought it.

The beans really shine here. I pulled off some rib meat and some chiccaron to cook the beans with. There's also a touch of ground beef taco meat in there.

right on. it's my new jam - I keep butter in the fridge and gave up fussing around with spreading it. Butter knife-it into wafers and wedges makes for pleasing character. I'm not shy with the butter anymore either. Need my D.

ps. that faux-rye is a soft bread loaf from across the border. Not really the real deal but its really good.
