beef sourced on US soil is less risky than seafood. having said that, i love a good fish fry.

Farm raised fish is not always clean. I saw a fish farming operation in Vietnam that looked kinda sketchy. Cigarette butts in the water, murky etc. Farm raised salmon is grey, they dye it to make it pink. Etc.

Shit no!  We literally have prized oysters here. Hood Canal and Puget Sound

We get good local oysters here too, Long Island sound I think? The oysters were super depleted but they came back.

Fresh lemon wedge, horseradish, and mignonette. But not all together. No hot sauce on my oysters. And sometimes just alone.

Looks delicious. What did you buy at H Mart, and what did you make from scratch?

I got ground pork, sliced pork belly, Thai chilis, rice noodles  and green papaya.

The veggies we grew except for the cuke. I pickled the green papaya carrot and radish salad. I made the nuoc Cham (dipping sauce), and the patties and belly with a bunch of marinade ingredients.
