Yep completely raw. i dress it and let it sit for 20-30 minutes, that helps it break down just a bit. Most people won't eat a raw kale salad because it's a little rough. pussy's

The only respectable way to eat left over risotto. mix an egg with it and pan fry it in extra virgin olive oil. Some may argue there is no way to eat leftover risotto. Served with butter lettuce and greens tossed with marinated shallots and shaved apple in a lemon vinaigrette

A complex sandwich but oh man does it deliver and if you make it big like I did ( I used about a 12' boule`) you got sandwiches for a few days.
Seriously they're better the next day and even the third day. there are different variations, try your own.

Not lunch (it's my dinner time) and no pics, because I've already eaten the shit out of it, but a can of Santamaria Portuguese sardines in hot sauce, a handful of salted capers, some balsamic and cracked pepper on toasted sourdough is rocking my world right now. Fast, and cost all of 2 bucks.
I reckon this would work alright with some fresh sardines, done ceviche style with some lemon juice, vinegar and chilli. Might have a crack at that this weekend.

yeah, i cut the avocado in chunks and didn't mush it much, but i also cut the onions in really big chunks. i wanted to dice them up but my eyes were watering like a motherfucker and i couldn't stand it, so i left the onion pieces pretty large.

Many of my dishes are one offs inspire by my obsessive attitude towards waste. I had a package of frozen peas that had been in the freezer for months and a couple chunks of smoked pork shanks in the meat thing drawer were in there for longer than I feel comfortable admitting. Also a couple huge beautiful leeks that I hadn't done anything with. The food blogs are literally blooming with all these spring recipes and I saw a spring pea recipe a couple weeks back and remembered that. So was born lunch today. My own version of a spring pea soup made....with...frozen...peas..derp.
I put the shanks in some water with some onions and simmered them for a couple hours this morning to loosen them up and kill any bad stuff. heh. Pulled all the meat off and into small pieces. Sauteed that up with some diced carrots, garlic, celery, and half of one of the big leeks. Added some chicken stock and let the carrots get a little soft. I then stirred in some quinoa and let that simmer for about 10. Stir some frozen peas in and let them come to temp and last but not least, chopped parsley. Plated with cracked black pepper. YUMM!.
This could also be made vegan very easily. Veg stock and tofu would be killer.

I normally have Sacred Sea tuna on hand. Oregon line caught young tuna. Near zero mercury. It's not cheap, case only sales direct at like $160 or something. I split with somebody usually. My boss the last couple times. Right now they're doing half cases. If you're into it look em up. I'm gonna buy a half case right now.
