Snow!?  We're having bomb cyclones out here. It's not as dangerous as it sounds. Nothing happens out here except for the imminent subduction earthquake and that volcano that one time.

This was about 10:00 last night.  Right now at 5:30am it looks much the same.  Burning through charcoal pretty fast because of the weather.   November snow in Tennessee.

Picked up this years venison the other say. I'd say this was about 70lbs worth.  $123 In butcher fees.  And I need to make the guy 5lbs of summer sausage.

I came across this pickled shrimp dish a couple months back and just now had a chance to make it.
I've been really intrigued with this.
I've been to Hawaii several times but never came across it. Or maybe I did when I was at this liquor store/poke shop on Maui called Tamuras that had a shit ton of options. Dang it.

It's a mix of dried shrimp, dried cuttlefish or squid, seaweed, onions, tomatoes in a vinegar shoyu
marinade.

All I had were the small dried shrimp that I use in Thai cooking but it calls for the larger ones and I can get those. You can make it a bit sweet if you want or a bit spicy. I did it just a tad sweet. I might add some chilis.
I haven't found evidence yet but this has got to be Japanese influenced. Delicious.

This might be a good source for larger dried shrimp.

Butts trimmed, soaking in brine for tonight's cook.

I learned today that a typical coleman cooler is right on in size to contain 10 Boston Butts, and the brine to cover them.  I also learned that a 3lb box of kosher salt, a 2lb bag of brown sugar and a 5 gallon bucket full of water is the perfect way to make a large batch of brine, instead of measuring out the salt and sugar.  It just happens to come out right, a little shy on the sugar, but that isn't a concern at all.

There's 10 butts in there.  It's 38° outside with a snow threat in the forecast.  So it's perfect for this.
