Super fun dinner last night. Not a grand photo sorry.
Salisbury steak over smashed Yukons and smothered in a tangy onion mushroom brown gravy. Steamed broccoli with grated Gouda cuz healthy! Right?!?
There's a million recipes for the Salisbury. Pick one.
But...I recommend my gravy technique. Sear your "steaks" first in some butter until about 60% done and set aside. In that same hot pan brown your onions and shrooms until a nice dark golden brown. I like a little texture still to the onions. Deglaze with stock or white wine. Set aside. Add a bit of evoo and some butter until melted add your flour for the dark roux.
Gradually over low ish heat add in your stock of choice then add back in your onions and shrooms.
Season your gravy with s&p, ketchup, Dijon, wash your sister sauce and dark soy to your liking.
Finish your "steaks" in the gravy.
I like this way better than adding flour to your rough duxelles. You end up with a silkier gravy.
Also look up salt potatoes. Yum.

Yeah, a tamale sandwich doesn't sound right.  I mean, you could put spaghetti on two pieces of garlic bread and call it a sandwich.

Well the current  Chefwich going on is a torta that has a tamale in it. Tamales are already filling and then to add one to a sandwich is just super overkill but live I said if I'd known they were hour to do a torts I would have gone another direction.

nearing the edge of sandiwch territory to call that a sandwich, to my thinking. I guess gravy on the side sneaks it in but otherwise would be an open-face "sandwich", gravy over, on a platter. And WHO puts breaded and fried inside two peices of bread? I have questions*

* oh, fishwich, fried chichen, etc...I guess just I'm nitpicking for no reason.

Well unfortunately I didn't win the sandwich deal.  However, according to an insider, I was in the top 10 for consideration. I think the main thing that foiled my chances was that the December Chefwich is basically a torta and too close to my submission. I had no way of knowing that dammit.

Now as for the winner I'm a bit miffed. The winner is in the food business already. This was supposed to be a Citizenwich. They could've just collaborated for a Chefwich.

The winning sandwich. Sounds good though not terribly innovative or seasonal.

Gravy Train- Texas toast buttered and grilled, chicken fried steak, dill pickle rounds, bacon and egg with a side of country gravy.
