Oh and I've been doing the cleanup today. In truth, making this much bbq isn't much more work than making 1/10th this amount.  But for the amount of work that goes into it, I don't really see how restaurants can make money doing it. I'll do some math later to try and figure out food costs and hrly burden.

Wedding planners are high on my shit list.  Right up there with realtors.  

Anyway, yeah they priced it at $5 per sandwich, while a pizza slice was $3.  Eventually they came around to including chips and a drink for $5 and sold more, but i think the rush was over by then. High school kids want pizza and it's cheaper, go figure.  

 Now, they did use the bbq to feed the judges of the competition and it was hit with them.  Many of them told my wife it was the best bbq they'd ever had in their life.  That's actually saying something in this part of the country.  I should come up with business card or something, make myself available for hire to deliver or something.   

So afterwards they talked it over and decided they knew better how to approach the whole thing next year, because nobody wants to waste food or get put out doing too much.  Just get pizza for the kids, supplement with bbq.  Intend on feeding the judges and parents with bbq.  Probably half the amount I did for today.  

So we'll have it for dinner tonight, then freeze the rest portioned out in vacuum bags.

bbq for 200 but 150 are vegetarians. I tell ya those folks have an iron grip on their veggies.

What the heck?  Too many options for everybody? 

Years ago sone friends were getting married. I was tasked with making this specific rice salad that I didn't really care for and didn't think anybody else would either. It was a type of pineapple rice thing. It was also a Hawaiian themed. I made it exactly how they wanted and in the portion they wanted. Most of it went to waste. Two things I hate. Wasted food and doing something for no reason. You wanna pick a fight with me?  Tell me "because I said so".

Service today. Wife texted me that we're going to have a lot of bbq coming back home.  Guess I'll be vacuum sealing some leftovers.

Ha.  With this package deal, there's one cut I haven't seen.  Backstraps.  I guess they're reserved for the hunter.  Not surprised.

There aren't any sasquatches out there. 

I'm actually still cooking it.  Right at 17 hrs, and i need to pull it off, but I'm still working.  I'm just going to let the smokers go and in a couple hours start pulling.  Want to cool it off kinda quick, so spreading it out outside where it's 40° then to the fridge. 

Her sauce:

3 cups AC Vinegar
1/2 cup chicken stock
Then add in the following to your liking; think tsp and tbs:

Dry mustard
Red pepper flakes
Brown sugar
Ketchup (just to make it opaque, not thick)
Garlic powder or fresh minced if you prefer
A few splashes of Worcestershire
Couple drops of hot sauce to make it bloom a little. 

That's basically it.

Edit:  simmer on the stovetop for about 20 minutes.  Forgot to mention that.
