The flavors are fish sauce, shallots, garlic, and dark soy sauce in the meatballs.

In other food blog news. I repurposed some brine from some asparagus pickles and added a little sumpin sumpin.

Coincidentally, I too, have taken inspiration from the cuisine of Asia for tonight's main course.

Free range chicken breast seasoned with Poultry Magic and grilled en cast iron. Then baked au gratin in a velvety rich and refreshing Spinach Dal capped with a layer of pepper jack.









Well heck a few mishaps but think chicken parm. Flour quesadilla subbed for Naan.

Fucking around and curing some egg yolks because a youtube chef made it look cool. Should have used a smaller, deeper container but we'll see how it goes.

My plans of making XO sauce today were foiled by not being able to find dried scallops. I got some coming in the post straight away though.

Dried. I did buy some naem today. I'd make my own but not sure I'd eat the whole batch in time.

My dried scallops are sitting on the porch while I'm at work. If anybody steals them they're in for a surprise.
